Overnight Pistachio Oats

Ingredients

  • 40g oats
  • 2 tbsp chia seeds
  • 2 tbsp honey or maple syrup
  • 4 tsp pistachio butter (see notes)
  • 250ml plant-based milk
  • ½ tsp matcha, optional
  • 50g white chocolate
  • 2 tbsp chopped pistachios
  • 10g (one scoop) myota

 

Method

  1. In a medium bowel, combined oats, chia seeds, sweetener, 2 tsp pistachio butter, milk, matcha, and myota until combined. Separate the mixture into two separate glasses.
  2. Add 2 tsp pistachio butter to the top of each glass.
  3. Melt the white chocolate and pour a thin layer over the top of each glass, creating a chocolate shell. Sprinkle with chopped pistachios.
  4. Put in the fridge and leave for at least 3 hours, or overnight.

Note: To make pistachio butter, blend pistachios in a high-power blender until a nut butter forms. This make take up to 10 minutes before a smooth consistency forms.

Cooking time: 3 hours, or overnight, in fridge
